The Sil’ex cuvée from Michel Thomas & Fils is something else—a single-terroir expression from the appellation’s rarest, most coveted soil type, with the intensity and aging potential to match. Just a few hundred cases are made each year, and most never leave France. We found it on the wine list at La Pomme d’Or, a Michelin-recommended restaurant in the village of Sancerre, and didn’t leave without securing an allocation.
